Tissot is a bit of a specialist in Chardonnay, and despite Savagnin being the signature white variety from Jura, he doesn't (since 2012) make ouillé wines with the variety because he has few grapes and concentrates on making Vin Jaune. I tasted some different components of the potential 2022 Savagnin from Arbois that he vinifies by terroir. He does a quick pressing to have plenty of lees for the fermentation. He showed me a wine from Lias clay on blue marl mother rock that was serious and with more citrus notes and another one from Trias that was more open, more aromatic, more "Alsatian," if you like... This is only really a sketch of what the future wine could be, because he's already considering the possibility to make terroir Savagnin like he does with Chardonnay. This usually ages for two to three years under flor." - Luis Gutiérrez
