Style:
Pure Cabernet Sauvignon grown on Sonoma Mountain planted to Clone #337 which is prized for producing small, dark berries that are intensely flavored with generous tannins. Aged for 20 months in French oak barrels, this is a plush red with cassis and blackberry fruit supported by notes of baking spices and mocha.
Story:
Egret is a line of wines from Bonneau Winery that donates a portion of its profits to help support the Audubon Society. The Bonneau family emigrated to Sonoma in 1921 where they farmed the land, ran a dairy, and operated a delicatessen. Grandson, John Bambury, is the head of winemaking at the estate. In addition to the winery, you can visit their deli at the corner of Bonneau Road and Arnold Drive (Highway 121).
Pairings:
This classically styled Cabernet Sauvignon is a gift to chefs of all skill levels. A glass alongside your dish is the perfect flavor enhancer! Ideally a rich stew or long-braised cut of beef will do nicely.
