Style : Nebbiolo is arguably Italy’s most noble red grape. There are many wine enthusiasts who hold it in similar regard to Burgundian Pinot Noir. It’s light to medium in color and aromatically complex, though that is where the similarities end. On the palate, Nebbiolo can make for a powerful, full-bodied wine with structure marked by firm tannins.
Story : Carlin de Paolo is a family winery now run by its fourth generation. The estate’s beginnings were taken on by Paolo, the great-grandfather of the newest generation in charge. His son, Carlin later took over and put the property on the map. Carlin was a tireless worker who labored in the vineyard daily and sacrificed much for the love of his family. Amidst the fatigue, he always maintained his joyful nature. The quote that perfectly epitomizes the family’s philosophy, “The best ingredient of a wine is the honesty of the producer.”
Pairings : This is a rich, complex red with notes and aromas of dark cherries, earth, clove spice and mocha. The tannins are firm and suit the wine’s structure harmoniously. It’s traditionally served with foods that feature fat, butter and olive oil. You can’t go wrong with Osso-Buco, or any rustic, Italian fare. Some even like to pair it with spicy, savory Asian dishes, like Vietnamese Shaking Beef.
