NV Pascal Doquet Arpege Blanc de Blancs 1er Cru Extra Brut
100% Chardonnay, based on the 2013 vintage (50%). Bottled April 2015, disgorged 11/28/19. Extra Brut at 3.5 grams/liter sugar. Certified AB organic. Absolutely gorgeous, mineral-driven, chalky, with a touch of brioche, a hint of mint, and a citrusy, nutty finish.

Creamy, honeyed peach aromas give way to a rich and full palate. It's silky and tasty, with a delicate, soft mousse and comforting flavours of honey cake, caramel and spiced apples. Refreshing and zesty bitter lemon perks up the finish. Pascal Doquet organically farms 8ha of vines, mainly in Mesnil, Vertus and Bergers. His wines are spontaneously fermented.
"The ‘Arpège’ in this Cuvée’s name refers to the fact it is made from fruit grown in three villages: Vertus, Mont Aimée and Villeneuve. Pascal Doquet established his own estate in 2004 after making wines for his parents’ label since 1982 and runs his domaine to strict organic principles using native fermentations and a variety of vessels from concrete to wood to stainless steel. 100% Chardonnay, spontaneous fermentation, minimal-intervention winemaking, bottling with the lightest of filtrations and no fining. After malolactic fermentation in tank, the wines remain sur lie for five months with approximately one-third of the production being aged in used oak barrels before secondary fermentation in bottle."
