Stephane Tissot's crazy good late-harvested Vin Doux Naturel is made from a blend of approximately one-third marc de Franche-Comté and two-thirds unfermented Chardonnay and Savagnin grape juice, farmed organically and biodynamically, as are all his vines. This liqueur is aged for at least two years in barrels, then bottled.

"Intense, deep but so elegant, the fleshy nutty notes building a broody core, coated with layers of yellow apple, nectarine, quince and apricot. "I think this was the first time Tissot showed me the NV Macvin Blanc, which spends an average of 10 years in a warm cellar, which concentrates the wine even further, making it lush and velvety. This is fortified to 19% alcohol, so it's a bit spirity, with notes of baked apples but also surprisingly floral.
