The Persia cuvée is one of the fancier bottlings made by our old pals Sébastien Vincenti and Nanou Barthélemy at Domaine Fondrèche in Ventoux. It’s 90% Syrah and 10% Mourvèdre all raised in large foudre, so there is a little texture derived from the wood. Big and bold with dark fruit and spice, it’s best served with something a little gamey like leg of lamb or duck breast.
