The Morini family once sold their grapes to the local cooperative, but started bottling their own wines in the 1990s, when they built their winery and aging cellar. The grapes are destemmed and pressed, fermentation is temperature controlled, and aging is done in stainless steel tanks. Their wines are the quintessence of the warm lands of Illasi, whose history stretched back two thousand years to the Romans, who chose the town for its ideal location for cultivating fruit and olive trees as well as grapevines.
