This wine gets its name from a 13th Century Cistercian monk who apparently defied a religious edict limiting the amount of wine one was allowed to consume in a day. Macabeo is the primary grape blended into Spain’s sparkling wine, Cava. Its aromas are of lime peel, stone fruit, herbs and mineral. It shows a fleshy body with well-balanced acidity. It’s great with deep fried sea critters.
