Stephane Tissot's crazy good late-harvested Vin Doux Naturel is made from a blend of approximately one-third Franch-Comté marc and two-thirds unfermented Chardonnay and Savagnin grape juice, farmed organically and biodynamically, as are all his vines. This liquer is aged for an average of 10 years in barrels, in the warmest part of the cellar, then bottled.
