Though originating in Europe, the Pais grape has been thriving in Chile for over a century! In 1990, Francisco Gillmore took over what was then a century old winery planted with dry-farmed Pais. Now run by daughter Daniella and her winemaker husband Andres Sanchez, they produce wines of strong character and sense of place. It’s similar to a Beaujolais, as it’s a light-bodied red with cheerful strawberry and raspberry aromas. Chill it and pair it with your nonna’s family recipe for lasagna.
